Wild-yeast fermented during 10-12 months in our old oak casks. Since 2020 vintage, 1\/3 of the volume is crushed with the feet and macerated in Spanish tinajas amphoras. After 6 or 7 months skin contact we press the content of the amphoras and assemble with the 2\/3 which fermented in the barrels. After a few months maturation the wine is estate bottled without filtration nor sulfites: natural wine!\u003c\/p\u003e\n\u003cp\u003eWHEN TO DRINK IT?\u003cstrong\u003e\u003cspan\u003e \u003c\/span\u003e\u003c\/strong\u003eDespite it is already agreeable at the moment, it would be great to age it 5-15 more years to enjoy the purity, the minerality and complexity.\u003c\/p\u003e\n\u003cp\u003eTASTING NOTES: Expressive ripe fruits on the nose. Juicy and fruity in mouth, it finishes dry and elegant. The saltiness give a nice crystalline texture. Good balance between fruit, ripeness and elegant acidity. Long and complex.\u003c\/p\u003e\n\u003cp\u003eWHAT TO DRINK IT WITH? : Very juicy and complex at the mean time, it is a very good wine to pair with nice appetizers like smoked salmon, raw vegetables with diverse sauces etc. Its texture matches very well with white meat like low temperature veal. Great with goat cheese.\u003c\/p\u003e\n\u003cp\u003eHOW TO SERVE IT? : At 12 to 15°C. Better when opened an hour before pouring. There can be some natural CO2, please decant if too much.
