Grape: raboso (local Venetian grape)
*re-fermented in-bottle: "When spring starts, the wine is bottled when nature is blooming, according to Maria Thun’s biodynamic calendar. Once in the bottle, residual sugars are transformed by yeasts into alcohol and carbon dioxide, obtaining a natural sparkling wine." Before this, the wine is naturally fermented (indigenous yeasts only) on the skins for 15 days, with no sulphur dioxide and further fermented on lees for a month.
Producer's Notes: "Fruity, Floral and spicy aromas accompanied by sweet notes of sugared almond. In the mouth is it is dry, with balanced tannins and a pleasant acidity."
