Cave Spring Pinot Gris - Niagara Peninsula, Ontario, Canada

 

Producer's Notes:

This wine originates from select West Niagara vineyards situated along the south shore of Lake Ontario. At these sites, shale and limestone soils, varying elevations, and moderating onshore breezes combine to produce a generous Pinot Gris with succulent fruit and delicate acidity unique to this corner of Niagara.


Aromas of cantaloupe, orange, lemon, and whipped cream; nuances of mint, fennel, slate, and marzipan fill the nose, while the palate is creamy up front with citrus pith and almond notes; rich and extracted in the middle, showing feathery tannins steeped in mandarin and persimmon fruit, framed by delicate acidity; a light salinity brightening the palate, building into a concentrated and vibrant finish of grapefruit, walnuts, and sea salt.
