Cocchi ‘Dopo Teatro’ Vermouth Amaro - Piemonte, Italy
Producer's Notes:
Vermouth Amaro Cocchi has been created according to the original recipe by Giulio Cocchi where Artemisia was enriched with rhubarb, quassia wood, chiretta and a double infusion of cinchona. The addition of Barolo Chinato to the base wine gives delicately red nuances and a further soft and complex note – totally Cocchi style.
What we say:
A beautifully distinctive bridge between vermouth and amaro, ‘Dopo Teatro’ is deeper, darker and more bittersweet than traditional styles, built on a red wine base enriched with Barolo Chinato. It opens with layered aromas of dark cherry, orange peel and baking spice, alongside a complex herbal mix - wormwood, rhubarb, cinchona and quassia - bringing both aromatic lift and a firm bitter backbone.
The palate is rich and enveloping, combining vermouth’s gentle sweetness with amaro-like bitterness and structure, showing flavours of cola spice, cocoa, mint and dried citrus. There’s a subtle tannic grip from the Barolo component, giving it more depth and persistence than most vermouths.
Named for the Piedmontese tradition of enjoying a small glass “after the theatre,” it’s designed as an evening aperitivo or digestivo, served chilled with a twist of lemon - or used to add complexity and bitterness to cocktails like a Negroni or Boulevardier.
Grape Variety: Aromatised wine (Barolo Chinato-enriched base)
Style: Vermouth/Amaro hybrid – Bittersweet, aromatic, medium-bodied
Drink Window: Best enjoyed fresh (refrigerate after opening)
Perfect For: Negroni, Boulevardier, after-dinner sipping, dark chocolate
A cult favourite for a reason - richer, darker and more complex than standard vermouth, and a serious upgrade for cocktail lovers.
