This wine originates from the limestone-rich soils of our Cave Spring Vineyard, located on a terrace of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Produced from the oldest, lowest-yielding vines at the estate, our CSV wines embody our highest commitment to quality and authenticity.

Precise, concentrated and unmistakably Niagara, Cave Spring’s ‘CSV’ Riesling comes from the estate’s flagship Cave Spring Vineyard on the Beamsville Bench, where limestone-clay soils, elevation and cooling breezes from Lake Ontario help shape Riesling with real tension and mineral definition. The 2020 vintage was warm and dry, giving the wine extra ripeness and concentration, but the palate stays beautifully taut: lime, grapefruit, pear and lemon tea run through a dry, acidity-driven frame, with hints of petrol, spice, honeyed citrus and stony minerality adding complexity. It feels both generous and electric, finishing long, clean and sharply focused.

Made from mature estate-grown Riesling, the ‘CSV’ bottling represents Cave Spring’s top-tier commitment to site expression and age-worthiness. Wine Enthusiast awarded the 2020 92 points and an Editors’ Choice designation, highlighting its dry, taut profile and citrus-led intensity, while Wine Spectator rated it 90 points, noting its peach, lemon cake, honey and pine complexity with a clean, dry finish.
