Bright, dry and full of Mediterranean energy, ‘Aviv’ Rosé is a fresh, fruit-forward Israeli rosé built around lift, colour and easy food-friendliness. It opens with lively red berry fruit, citrus and a gentle floral edge, with strawberry, raspberry and pink grapefruit giving the wine plenty of immediate charm. The palate is crisp and refreshing, with vibrant red fruit, clean acidity and a subtle mineral snap that keeps the finish bright rather than sweet. It’s a rosé made for warm weather, generous pours and food on the table.
The current-release Aviv Rosé is made from a blend of Syrah, Tempranillo, Grenache and Barbera, with the grapes grown in the Upper Galilee, where high-elevation vineyards, limestone, flint, terra rossa and basalt soils, and cool mountain influence help preserve freshness. Earlier notes for Galil Mountain’s rosé also point to early-morning picking, brief skin contact for delicate colour and cool fermentation in stainless steel, all aimed at keeping the wine crisp, aromatic and refreshing.
