Cave Spring Gamay - Niagara Escarpment, Ontario, Canada

Producer's Notes:

This wine originates from our Cave Spring Vineyard, nestled on a hillside of the Niagara Escarpment overlooking Lake Ontario, known as the Beamsville Bench. Along this gentle slope, dolostone soils, elevation, and moderating onshore breezes combine to produce a singular expression of Gamay with succulent berry fruit and peppery nuances true to our terroir.
Aromas of black pepper, black cherry, lavender, and caramel candy over notes of raspberry jam, cardamom, and vanilla. The palate is medium-bodied with juicy black raspberry fruit and ripe, granular tannins up front; the tannins attenuate in the middle, maintaining a dense feel while harmonizing with succulent blackberry fruit and dried basil notes; a streak of salinity lines the edges, lending freshness as the tannins give way to a long, savoury finish of ripe strawberry, pulled thyme, anise, and graphite.

What We Say:

Lake Ontario’s moderating breezes, conjoined with the estate’s Limestone-clay soils and elevation, create a distinctive cool-climate expression to bring forth this Gamay, combining juicy red and dark berry fruit with peppery spice, herbs, and subtle savoury notes. The aromas are filled with Bing cherry, raspberry, red currant and blackberry alongside cracked black pepper, while the palate is juicy and finely structured, opening with vibrant cherry and raspberry before darker berries like blackberry, blueberry and red currant come to life.
