Initial aromas of fresh cranberries, toasted spice, and ripe tamarillo. These aromas develop into earthy notes and dark plum after some time in the glass. The palate offers attractive dark fruit with classic Tasmanian acidity, accompanied by complex herbal notes and a lingering finish with a touch of oak spice.

Dalrymple's standard Pinot Noir is assembled from carefully selected parcels across several Tasmanian vineyard sites. Each parcel is picked according to its ripeness and individual quality. The fruit is fermented in small batches, beginning after a short preparation period, and generally lasting four to five days. The wine is then pressed and settled before being transferred into French oak barriques.
