Domaine de Montahuc ‘Aurore Minervoise’ Rosé - Minervois, Languedoc, France
Fresh, vibrant and more characterful than its delicate pale-pink colour might suggest, Aurore Minervoise is a beautifully balanced southern French rosé with both energy and substance. Aromas of wild strawberry, raspberry and redcurrant mingle with subtle floral and citrus notes. The palate opens with a lively, expressive burst of fresh fruit before becoming supple and gently rounded, with crisp acidity and a distinctive mineral edge bringing focus to the long, refreshing finish.
A blend of 60% Syrah and 40% Grenache Noir, the wine comes from dry-farmed, goblet-trained vines more than 25 years old. The vineyards sit between 280 and 300 metres above sea level on the shallow, highly stony lacustrine limestone soils of Saint-Jean-de-Minervois. These elevated vineyards provide the fruit with excellent ripeness while preserving the freshness and mineral definition that distinguish the wine. Grapes are harvested by hand and vinified at very low temperatures, followed by a short maturation in stainless steel to retain the purity and brightness of the fruit. The estate has farmed organically since 1990 and is certified by Ecocert.
