Winemaker's Notes:

Juice exclusively from cuvée.
Malolactic fermentation carried out in stainless steel tanks.
12% cask (MLF blocked).
Aged 30 months in the cellar.
Dosage: Extra Brut.

Luminous and rather dense robe. Subtle and pure nose, notes of smoky limestone, aroma of fresh grapes, apple, cherry. Notes of almond, licorice, pink grapefruit, fresh blackcurrant, wild strawberry, with more heady notes of honeysuckle, pepper and sweet spices. Contact on the palate is clean and fresh, with creamy, melted effervescence. Pulpy and crunchy fruitiness.

A strikingly fresh and contemporary grower Champagne, De Quoi te Mêles-Tu? (“What’s it to you?”) is crafted by the young and dynamic La Borderie estate in the Côte des Bar. Focused, mineral, and quietly expressive, it offers a beautifully textured, terroir-driven take on Extra Brut - bone-dry, precise, and deeply refreshing.

The nose opens with citrus blossom, green apple, pear skin, and chalky minerality, complemented by touches of pastry and white flowers from extended lees ageing. On the palate, the wine is taut and elegant: fine bubbles, crisp acidity, and a sleek profile of orchard fruit, citrus, and subtle brioche. The finish is long, saline, and lifted, showing the hallmark purity of the Aube’s Kimmeridgian limestone.
