Tucked along the Cantabrian Sea, just west of San Sebastián, lies the small yet vibrant Getariako Txakolina wine region. Crafted by the Lazkano family, this bone-dry, piercingly acidic white wine is primarily made from the indigenous Hondarrabi Zuri grape, occasionally blended with small touches of local varieties like Izkiriota, Chardonnay, or red Hondarrabi Beltza. Fermentation uses native yeasts in stainless steel, and the wine is aged briefly on its lees for added texture.
