The fresh spring wine. It is the wine produced with the traditional Tuscan vinification technique, called "Governo", which sees the addition of a small quantity of dried grapes after the first fermentation. Ready in the spring, this wine is soft, lively, easy to drink and can also be enjoyed cold in the fridge during the summer.

A lively and generous red from Castellare di Castellina that captures the best of traditional Tuscan winemaking with a modern, food-friendly spirit. The Governo method used here involves adding a portion of semi-dried grapes back into the fermenting wine, which naturally boosts glycerol, ripe fruit intensity and texture while enhancing the wine’s structure and freshness - a technique rooted in classical Tuscan practice for deeper flavour without harshness.
On the nose you’ll find ripe cherry, plum and wild berry alongside herbal hints, baking spice and a touch of earth. The palate is medium-to-full-bodied, with juicy dark fruit framed by silky tannins and vibrant acidity that keeps the finish fresh and balanced. Plush yet energetic, this is a wine that bridges tradition and approachability.
