Moulin de Gassac Pinot Noir - Pays d’Oc, France
Light, supple and pleasantly polished, this southern French Pinot Noir offers a softer, sunnier take on the grape while still keeping plenty of freshness. It opens with candied cherry, strawberry and raspberry, layered with gentle roasted notes, a hint of mocha and a subtle earthy edge. The palate is smooth and fruit-driven, with soft tannins, lively acidity and an easy, rounded texture that makes it instantly approachable without feeling heavy.
Made from 100% Pinot Noir grown on clay-limestone soils around Cournonterral and Fabrègues in the Languedoc, the wine is vinified with a short, cool maceration of around three to five days to preserve bright fruit and delicacy. It is then aged for six months in stainless steel rather than oak, keeping the focus firmly on freshness, softness and clean Pinot character.
