A playful yet seriously well-crafted white from Rosewood Estate Winery, White Rabbit is a multi-varietal blend that leans into creativity and texture while staying bright and refreshing. A staple of the winery’s experimental range, it’s designed to be both interesting and highly drinkable.
White Rabbit sits in that increasingly popular space between classic aromatic white blends and natural / experimental wine. It offers high acidity, layered fruit and a subtle creamy texture, making it both versatile and a bit more interesting than your average white blend.
The wine is wild fermented with indigenous yeasts and aged in stainless steel, with some components co-fermented to build complexity. It is unfined (vegan-friendly) and made with a minimal-intervention approach, emphasising expression and texture.
The 2024 opens with expressive aromatics of cantaloupe, Asian pear and citrus zest, alongside hints of white peach and subtle floral lift. On the palate it is dry and high in acidity, with a lively, refreshing core of orchard and citrus fruit balanced by a slight creaminess from partial malolactic fermentation, giving added texture and roundness. The finish is clean, energetic and surprisingly layered for such an easygoing wine.
