Origin: Dambach-la-Ville, Alsace, France

Grapes: Riesling, Pinot Gris, Pinot Noir

Producer's notes: 

VINIFICATION : The grapes are put in the pneumatic press without crushing, and the pressing is long and smooth in order to preserve the purity of the aromas. 10% is macerated in the oak casks. Wild-yeast fermented during 8-10 months in our old oak casks. Estate bottled.

WHEN TO DRINK IT? Between 5 and 15 years, it will become more and more elegant, revealing the crystalline saltiness. Don’t hesitate to keep it even longer!

TASTING NOTES: Ripe and elegant on the nose. Complex. Dry in mouth with a ripe acid structure. Ripe fruits give place to a long, straight and direct acidity. The crystalline saltiness give a strong texture.

WHAT TO DRINK IT WITH?: The strong personality of the wine lead to nice pairings with savoury dishes. Smoked salmon will reveal his mineral structure. Regarding fishes, go for tasteful fishes with elegant sauce: white wine or citrus, or even “tartare”. Nice pairings with white meat like low temperature veal which will match with the elegant texture of the wine. Aged cheeses will also pair with the saltiness of the wine: old comté, salers or parmesan. Don’t hesitate to taste it for itself: he will transmit you all the personality of this great terroir.

HOW TO SERVE IT? : At 10°C. Better when opened an hour before pouring. There can be some natural CO2, please decant if too much. Some lees in the bottles do not affect the quality of the wine.
