Wild, bright and beautifully vinous, Domaine Dandelion’s cider brings the same natural-wine sensibility as Morgane Seuillot and Christian Knott’s tiny Hautes-Côtes de Beaune domaine. It opens with crisp green apple, citrus peel and orchard blossom, with a lightly honeyed, floral edge and a fresh, almost saline snap. The palate is dry, lively and gently sparkling, with high natural acidity giving it real lift and tension. Rather than a rustic, tannic Normandy-style cider, this leans more toward a pét-nat feel: delicate, mineral, refreshing and quietly complex.
Made from organically grown apples sourced from independent growers in northern Burgundy, the cider is produced with remarkable attention to detail: apples are sorted, allowed to mature before pressing, then pressed and moved by gravity rather than pump. Fermentation occurs naturally, with no enzymes and no sulphur additions, and the cider is bottled by gravity to preserve purity and texture. The result is a small-production cider that feels unmistakably handmade - fresh, precise and full of Dandelion’s signature low-intervention energy.
