Domaine Dandelion ‘Aube’ Pinot Noir - Hautes-Côtes de Beaune, Burgundy, France

Delicate, lifted and quietly luminous, ‘Aube’ is Domaine Dandelion’s top Pinot Noir cuvée, made only in select years when the conditions are right. It opens with fragrant red fruit, including wild strawberry, raspberry and red cherry, alongside rose petal, fresh herbs and a subtle mineral edge. The palate is light, silky and finely drawn, with gentle tannins, bright acidity and a graceful, almost weightless feel that reflects the elevation of the domaine’s highest vineyard parcels. There’s a lovely herbal and stony nuance beneath the fruit, finishing pure, fresh and softly persistent.

Made from organic Pinot Noir grown in two south-east-facing parcels above Meloisey, on white marl with a little red clay, ‘Aube’ takes its name from the morning sun that hits these slopes at daybreak. The fruit is hand-harvested, whole-bunch macerated in concrete, then fermented with indigenous yeasts and aged in old barrels before bottling without fining, filtration or added sulphur. Tiny production and a very hands-off approach give the wine its fragile, transparent character.
