Domaine d’Edouard Bourgogne Pinot Noir - Côtes d'Auxerre, Burgundy, France

Producer's Notes:

This wine is a blend from six parcels of the estate. Maceration, lasting approximately two weeks, is carried out with partially destemmed grapes (20% to 40% destemmed depending on the vintage) and a majority of whole bunches, meaning with the stems. Following vinification, the wines are aged for one year, 90% in 228-liter barrels and 600-liter demi-muids, and 10% in tanks. This cuvée has a slightly more tannic structure than other wines of the region, thanks to the use of whole-cluster fermentation. This will impart freshness and substance to the wine in subsequent years. This wine possesses the crisp, tangy character typical of the region, but it also displays a fruity and appealing character (Morello cherry) in its youth, delighting the palate. It will age beautifully and develop lovely fruity, slightly floral, and forest floor notes after a few years of cellaring.

A cool-climate expression of Pinot Noir from Côtes d’Auxerre, this wine opens with aromas of wild strawberry, red cherry and raspberry, layered with rose petal, forest floor and subtle herbs. The minerality is distinctive, reflecting the region's limestone and clay soils. The palate is vibrant and finely detailed, with fresh acidity and silky, lightly grippy tannins giving it structure without weight. Made with a gentle, low-intervention approach - often including partial whole-cluster fermentation and aging in older oak - it prioritizes clarity and finesse over power, finishing clean, precise, and quietly persistent.
