• Terroir: From old vines on the lower slopes of Brézé and young vines from Clos de Guichaux and Clos des Carmes, clay-limestone.
• Viticulture: Organic (AB, 2007)
• Vinification: Sorted in the vineyards, pressed with whole clusters, ambient yeast fermentation, blocked malolactic conversion, aged for 7-10 months on the lees in a combination of stainless steel tanks and foudres, filtered.
