Producer's notes:
All the Riesling grapes are hand-harvested, gently pressed whole bunch, and their musts are left overnight to settle naturally, before being racked and fermented with ambient yeasts in old 1,000-liter Fuder casks and a couple of 500-liter Halbfuder. The father-and-son team of Erich and Johannes Weber eschew herbicides and favor low yields—just one short “flat” or non-arched cane (Flachbogen) per vine—to produce an array of dry (trocken), off-dry (feinherb), and fruity Saar Rieslings, which represent mostly cask-by-cask bottlings.

A beautifully poised, classically Saar Spätlese, Förster AP 5 comes from the steep, slate-rich slopes of the Krettnacher Euchariusberg, one of Falkenstein’s most treasured vineyards. As always with the estate, winemaking is traditional and transparent - spontaneous fermentation, long elevage in old fuder, no cosmetic adjustments - resulting in a wine of purity, lift, and quiet depth.
The nose is expressive yet refined, showing aromas of ripe white peach, lime zest, apricot blossom, and cool, smoky slate. On the palate, it offers the signature Falkenstein combination of feather-light texture and vivid acidity: sweet-edged fruit balanced perfectly by crystalline freshness. The finish is long, shimmering, and mineral, with the vineyard’s distinctive slate character running straight through it.
