Hubert Lignier 'Symbiose' Bourgogne Pinot Noir - Burgundy, France

Producer's Notes:

The estate has taken over the cultivation of four small plots of Burgundy Pinot Noir in the communes of Meursault (Les Durots), Pommard (Charvet and Sorbin) and Vosne Romanée (La Croix Blanche). The combination of these four terroirs gives the cuvée a delicious texture of red berries (redcurrant, cherry, and wild strawberry). Aged for 15 months in oak barrels, the wine can be enjoyed young or after several years of cellaring.

What We Say:

A Bourgogne Rouge that blends fruit from several distinct Burgundy terroirs, resulting in a bright, silky, fragrant Pinot Noir. The wine emphasizes red fruit, freshness, and texture rather than power. The nose leads with aromas of cherry, redcurrant, and wild strawberry. Floral violet notes can emerge alongside hints of fresh earth and delicate spice. It sits firmly in the elegant, terroir-driven Burgundy category rather than being built around concentration or overwhelming oak.


For Symbiose, the grapes are destemmed, natural-yeast fermentation happens in open concrete tanks, and there is a relatively long cold maceration before fermentation. Fermentation generally runs for around 15–20 days, with manual punch-downs. The wine then receives approximately 15 months of élevage in oak barrels.
