From the minimal-intervention, terroir-focused Illimis project, this Pinotage is a fresh, elegant, and decidedly modern take on South Africa’s signature grape. Crafted with whole-berry fermentation, gentle extraction, and neutral oak, it showcases Pinotage in a lighter, more aromatic style - nothing like the heavy, smoky expressions of the past.

The nose opens with vibrant notes of red cherry, cranberry, raspberry, and hibiscus, layered with hints of rooibos, spice, and a touch of earth. On the palate, it’s silky and energetic: light to medium-bodied with fine tannins, juicy red fruit, and refreshing acidity that makes it incredibly drinkable. A subtle savoury edge brings complexity without weight.
