Domaine d’Édouard Crémant de Bourgogne - Burgundy, France
Bright, dry and beautifully chiselled, Domaine d’Édouard’s Crémant de Bourgogne brings a distinctly northern Burgundian snap to the glass. It opens with lemon zest, yellow apple and white flowers, layered with fresh herbs, toasted nuts and a clean sea-salt freshness. The palate is lively and precise, with fine bubbles, crisp acidity and a bone-dry finish that keeps the wine feeling elegant rather than soft. There’s enough lees-aged texture to give it shape, but the overall impression is mineral, refreshing and wonderfully food-friendly.
Made from Chardonnay and Pinot Noir grown around Vaux in the Côtes d’Auxerre, the wine is produced using the traditional method, with separate fermentations before blending and a second fermentation in bottle. It spends at least 24 months on the lees and is bottled with zero dosage, giving it extra purity and tension. Domaine d’Édouard farms organically and biodynamically, with hand harvesting, indigenous yeast fermentation and a low-sulphur, hands-off approach in the cellar.
